Do you like berries? I love blueberries, blackberries, raspberries, strawberries, boysenberries and even mulberries. When I was a kid my neighbor had a large mulberry bush that we would indulge in. My sisters and I would sneak over there and pick as many berries as we could before anyone came out of the neighbors house. Then we would run home as fast as we could can run without dropping the precious fruit. We would throw them in a bowl, sprinkle with sugar and pour milk over them. I don’t even think we took the time to wash them. It is no wonder that some of my favorite recipes are loaded with berries! This Lip Smacking Good Blackberry Crisp is one of my favorite blackberry recipes!
Now that I am all grown up (or at least I would like to think I am) I am blessed with blackberry bushes. Come the first week in July we are deep in sweet beautiful purple tasty treats. Nature is so generous and we are there to take full advantage of the wonders of it. Hubby never complains about going out in the sweltering Missouri heat to the pick the berries. There is so much this beautiful berry has to offer. Blackberries are high in vitamin C and they only have 62 calories to a cup. The dark blue color (almost purple) ensures that they have one of the highest antioxidant levels of all fruits. We have wild and domestic bushes. We love both but we find that the berries that come off the wild bushes have more flavor and that leads to Lip Smacking Good Blackberry Crisp.
This Lip Smacking Good Blackberry Crisp is delicious warm or cold, topped with vanilla ice cream or simply dished out. It does not matter how you slice it you are going to love it!
- 6 cups fresh or frozen blackberries
- 1 teaspoon cinnamon
- 1/3 cup sugar
- 2 tablespoons cornstarch
- 2 tablespoons flour
- 1 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup flour
- 1/2 cup butter softened
- Preheat oven to 350 degrees.
- In large bowl gently mix blackberries, cinnamon, sugar, cornstarch and 2 tablespoons flour. Spoon into an 8 or 9 inch square baking dish sprayed with nonstick baking spray.
- in large bowl combine oats, brown sugar and 1/2 cup flour. Using a pastry knife cut in butter until mixture is crumbly. Sprinkle topping over berries..
- Bake for 40-45 minutes or until bubbly and the topping is golden brown.
