In a small bowl, mix salt, black pepper, garlic powder, onion powder, oregano, and paprika. Sprinkle over both sides of chicken thighs.

Heat olive oil in a skillet over medium heat. Cook chicken thighs until golden brown on both sides. Remove thighs to plate.

In the same skillet, add olive oil to the pan and reduce to medium-low. Add carrots, shallots, spinach, and garlic. And cook.

Add chicken broth and orzo. Bring to a low boil. Cover and turn to simmer. Remove lid and add cooked chicken thighs.
