Chocolate Covered Strawberries

Delectable and gorgeous this easy Chocolate Covered Strawberries recipe can take your dessert and candy trays to a whole new level.

Ingredients

  • 2 lbs strawberries washed and dried very well
  • 12 ounces chocolate chips (dark, semisweet, milk or white or a combination)
  • 23 teaspoons coconut oil or shortening
  • Assorted finely chopped nuts, graham cracker crumbs, crushed sandwich cookies or sprinkles

Instructions

  1. Melt chocolate in mini crock pot or microwave. (see notes)
  2. Stir in 1 – 1 1/2 teaspoons coconut oil to melted chocolate to thin it just a bit.
  3. Dip strawberries in melted chocolate and place on parchment covered baking sheets.
  4. Using a small spoon sprinkle some of the strawberries with chopped nuts, graham cracker crumbs, sprinkles or crushed cookies.  Place in refrigerator to set.
  5. If drizzling strawberries spoon several tablespoons melted chocolate in a zipper sandwich bag and snip off a tiny corner.  Drizzle over fully set strawberries.

Notes

  • Choose large ripe strawberries free of blemishes that are of uniform size.
  • Do not remove the leaves of the stem as it will allow you to hold on to the strawberry when you dunk it in the chocolate.
  • After washing dry the strawberries very thoroughly including the leaves of the stem with paper towels so the chocolate sticks and so it does not seize.  As any moisture can cause chocolate to seize.
  • If using nuts or graham cracker crumbs chop or crush very finely and spoon over the strawberries before the chocolate sets.
  • Melt the milk chocolate or dark chocolate in a mini crockpot. However heat the white chocolate in the microwave at a reduced power as it is a little more sensitive to heat.
  • Have everything you need within arm’s reach as chocolate can start to set quickly.
  • To drizzle simply add melted chocolate to a the corner of a plastic sandwich bag and then snip off a very small corner.  Drizzle over dipped and set chocolate strawberries.
  • If you have any leftover melted chocolate grab some cashews, almonds or peanuts and mix them in the melted chocolate.  Spoon by heaping tablespoons full onto parchment paper for quick and easy nut clusters.
