Frito Taco Pie

A Frito taco pie recipe full of seasoned ground beef, sweet onions and beans.  This family-friendly casserole is topped with two tasty kinds of cheese and baked to perfection.


  • 1 1/2 lbs ground beef
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 4 tablespoons taco seasoning
  • 1 1/4 cups water
  • 1 cup salsa style tomatoes
  • 1 can (15 ounce) kidney beans drained and rinsed
  • 45 cups Frito chips (78 ounces)
  • 1 cup cheddar cheese shredded
  • 1 cup Monterey Jack cheese shredded
  • 1 cup sliced grape tomatoes (optional)
  • 2/3 cup sliced black olives (optional)
  • 2 green onions chopped (optional)
  • sour cream (optional)


  1. Preheat oven to 350 degrees. Spray 9×13 inch casserole dish with nonstick cooking spray.
  2. In a large skillet over medium heat brown ground beef.  When ground beef is almost browned add onion and cook for 2-3 minutes.  Add garlic and cook for 1 minute; stirring constantly.  Drain excess grease.  Stir in taco seasoning and water.  Simmer for 10 minutes over low heat. Add salsa style tomatoes and kidney beans; stir to combine. Spoon into prepared baking dish.
  3. Top with Frito chips, shredded cheddar and shredded Monterey Jack.
  4. Bake for 30 minutes or until cheese is fully melted. Top with tomatoes, black olives, green onions and sour cream if desired.
