Put the frozen banana, vanilla yogurt, pumpkin puree, milk, cinnamon, ginger, nutmeg, vanilla extract, and maple syrup in a blender. Blend on high until smooth and creamy. Then top with whipped cream and a dusting of ground cinnamon.
Tips for making this Pumpkin Spice Smoothies
- You can freeze the banana whole with or without the peel on. The peel will turn black in the freezer, but it will not hurt the taste or texture of the inner flesh.
- Use canned pumpkin puree or fresh pumpkin puree. Make pumpkin chocolate chip muffins, pumpkin dip, or pumpkin chocolate chip cookies with the leftover pumpkin puree.
- This is a great way to use leftover bananas that will be tossed in the trash because they are overripe. Just freeze them and use them in smoothies.
- You can substitute any sweetened or unsweetened milk in this recipe, including non-dairy milk like oat milk, cashew milk, soy milk, coconut milk, and almond milk.
- Adjust the seasoning to taste.
- For extra protein, add a scoop of vanilla protein powder or a little nut butter.
- Use either plain Greek yogurt or plain traditional yogurt.
- Other sweeteners to use are honey or agave.
- If the smoothie is too thick for your liking, add a little more liquid. If it is too thin, add a little more frozen banana or ice cubes.
How to make fresh pumpkin puree
For the best flavor and consistency, use the smaller pumpkin pie pumpkins or sugar pumpkins. Carefully slice the pumpkin in half using a sharp knife. Use a non-slip cutting board. Then remove the seeds, strings, and loose pulp. Brush the edges and inside of the pumpkin with a little olive oil or vegetable oil. Then place it flesh side down on a baking sheet covered with parchment paper for easier clean up.
Roast for about 1 hour or until very fork tender. Then remove it from the oven and let it cool enough to handle it easily. Scoop the cooked pumpkin flesh out and into the bowl of a food processor. Puree on high until smooth. Store in an airtight container in the refrigerator. Use within 1 week or freeze for up to 6 months.
