Triple Berry Cream Cheese Coffee Cake




  1. Preheat oven to 350 degrees. Spray 9 inch spring form pan with nonstick cooking spray.
  2. Simmer berries and sugar over low heat until slightly thickened. Remove from heat and allow to cool.
  3. In small bowl sift together flour, baking soda, and baking powder.
  4. Using stand mixer cream butter and 3/4 cup sugar until smooth. Add 1 egg. Add sour cream and vanilla and blend just until combined. Add 1/2 cup of flour mixture at a time blending just until combined between each 1/2 cup; approximately 30 seconds. Pour into spring form pan.
  5. Using stand mixer cream cream cheese, ricotta cheese and 1/2 cup sugar until smooth. Add 1 egg. Add to the top of the cake in the spring form pan.
  6. Top with berry sauce.
  7. Bake for 40 minutes.
