Stir Fried Bok Choy

Stir Fried Bok Choy is an easy healthy side dish that is prepared in about ten minutes. Even my picky son loves this dish.

Ingredients

  • 1 tablespoon sesame seeds
  • 1 tablespoon canola oil
  • 1 tablespoon grated fresh ginger
  • 1 medium onion chopped
  • 1 large head bok choy see notes
  • 2 cloves garlic minced
  • 1/8 - 1/4 teaspoon crushed red pepper to taste
  • 1 tablespoon soy sauce

Instructions

  • Toast the sesame seeds in a dry skillet over medium heat until light browned; approximately 2-3 minutes. Toss or stir frequently to keep from burning.  Remove and place in a small bowl.
  • Heat canola oil in the same skillet over medium high heat. Add the ginger, onion and bok choy.  Cook for 2-3 minutes stirring frequently.  Add the garlic, red pepper and soy sauce and cook for additional 1 minute.  Sprinkle with toasted sesame seeds and serve immediately.

Notes

Remove the bottom 2 inches of the thick bulb.  Chop the bok choy and rinse thoroughly in a colander. Shake as much of the water out as possible.  Dry excess water with a paper towel. See more notes under How do you prepare bok choy for cooking?
