Ingredients

  • cup balsamic vinegar
  • cup soy sauce
  • cup olive oil
  • ¼ cup Worcestershire Sauce
  • 6 cloves minced garlic divided
  • 2 lbs sirloin steak see notes
  • 2 tablespoons vegetable oil or olive oil
  • 4 tablespoons unsalted butter
  • Kosher salt and fresh ground black pepper to taste
  • 2 teaspoons chopped fresh parsley

Instructions

  • In a shallow wide bowl, whisk together the balsamic vinegar, soy sauce, olive oil, Worcestershire Sauce, and 3 cloves of minced garlic. Add the sirloin to the marinade, cover, and refrigerate from 2 hours up to 6 hours. If the steak is not fully submerged in the marinade then flip it several times.
  • Remove the sirloin steak from the marinade. Dry the steaks with paper towels and cut them into bite-size pieces.
  • Heat the vegetable oil over high heat in a heavy skillet or cast iron skillet. Add the steak in a single layer and cook undisturbed for 2 minutes. Flip the steak and cook it for another 1-2 minutes. Remove the steak to a large plate. Cook in batches if needed. Wipe or wash the skillet clean.
  • Melt the butter in the skillet over low heat. Add the minced garlic, cooking for 1 minute while stirring. Add the steak bites back to the skillet and stir to coat with the garlic butter. Season with salt and pepper to taste and sprinkle with fresh chopped parsley.

Notes

  • Do not marinate the sirloin for more than 6 hours. The acid in the marinade will break down the proteins too much and change the texture of the meat.
  • If using top sirloin, tenderloin, ribeye, and New York strip steak, marinating them is unnecessary.
  • Get the vegetable oil really hot so that you can sear the steak bites. Cook the steak bites undisturbed for 2 minutes before flipping them. Then cook for just another 1-2 minutes, depending on how you like your steak.
  • These steak bites are best served promptly. Although they can be reheated, it does dry them out a little bit.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • If reheating these steak bites, serve them with my onion gravy over mashed potatoes. They are so delicious you will not even realize they have been reheated.
