Ingredients
1 ¼lbsasparagus spears trimmed and cut in 1-2 inch pieces
1tablespoonolive oil
2tablespoonsbutter
2clovesgarlic minced
½teaspoonkosher salt
½teaspoonfreshly ground black pepper or lemon pepper
2tablespoonsgrated Parmesan Cheese
Instructions
Heat the oil and melt the butter in a skillet over medium-high heat. Add the asparagus and cook for 3-5 minutes or until crisp-tender. Reduce the heat and add the garlic, cooking for 1 minute while stirring.
Season with salt and pepper to taste and sprinkle with Parmesan Cheese.
Notes
Look for good quality fresh asparagus stalks that have a nice dark green color, look plump and not shriveled, and have clean, crisp (not soft or slimy) tips.
Trim the tough ends off the bottom of the asparagus. I usually trim about 1 1/2 inches off the bottom of each stalk.
Use freshly grated Parmesan Cheese for the best flavor.
Other seasonings and fresh herbs to work with include red pepper flakes, basil, parsley, dill, chives, garlic powder, onion powder, and balsamic vinegar.
For a change of pace, try pine nuts, chopped almonds, lemon zest, or feta cheese.
Plan on serving this dish fairly promptly, as it is best served warm while it is just a teeny bit crisp. If desired, serve with a fresh lemon wedge for a spritz of fresh lemon juice.
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave at reduced power.
