Ingredients

  • 4 large boneless skinless chicken breasts
  • 2 tablespoons taco seasoning
  • 2 cups salsa mild or medium
  • 1 tablespoon chopped fresh cilantro
  • salt and freshly ground black pepper to taste

Instructions

  • Place the chicken breasts in a single layer in the bottom of a slow cooker.
  • Sprinkle with taco seasoning and top with salsa.
  • Cover with the klid and cook for 2-2 1/2 hours on high or 4-5 hours on low or until the chicken is easily shredded with two forks.
  • Season with salt and freshly ground black pepper to taste.

Notes

  • This recipe also works well with boneless, skinless chicken thighs. Just cook for the full 5-5 1/2 hours on low or until the meat shreds easily.
  • Choose a tomato-based salsa that you have enjoyed before. I like this brand from Walmart. It works and tastes well in this recipe.
  • Homemade Taco Seasoning is quick and easy to make, with so much flavor compared to those dry taco seasoning packets that have been sitting on the shelves for months.
