1 1/2lbscarrots peeled and cut in 1-1 1/2 inch chunks

1/3cuppacked light brown sugar
1/2cup water

Instructions
Add the carrots, butter, brown sugar, and water to a large skillet. Cover and cook over medium-low heat for about 10 minutes, or until the carrots begin to soften.
Remove the cover and cook over medium heat for 8-10 minutes, or until the glaze thickens.
Season with salt and pepper to taste and, if desired, a little bit of cinnamon and ground cayenne pepper. Sprinkle with chopped fresh parsley.
Notes
Peel carrots for aesthetic purposes. You will appreciate that you did. The bright orange color is pleasing.
Cut the carrots into 1-1 1/2 inch segments. Cut thick ends in half.
The little bit of cayenne pepper in this recipe does not make it spicy or hot. It adds a bit more flavor dimension.
This recipe can be prepared ahead of time and stored in an airtight container in the fridge. When ready to serve, heat the glazed carrots in a skillet over medium-low heat or in the microwave.
