Glazed Carrolts

Ingredients

  • 1 1/2 lbs carrots peeled and cut in 1-1 1/2 inch chunks
  • 1/4 cup butter
  • 1/3 cup packed light brown sugar
  • 1/2 cup water
  • kosher salt to taste
  • freshly ground black pepper to taste
  • 1/4 teaspoon ground cinnamon optional
  • 1 pinch ground cayenne pepper optional
  • chopped fresh parsley

Instructions

  • Add the carrots, butter, brown sugar, and water to a large skillet. Cover and cook over medium-low heat for about 10 minutes, or until the carrots begin to soften.
  • Remove the cover and cook over medium heat for 8-10 minutes, or until the glaze thickens.
  • Season with salt and pepper to taste and, if desired, a little bit of cinnamon and ground cayenne pepper. Sprinkle with chopped fresh parsley.

Notes

  • Peel carrots for aesthetic purposes. You will appreciate that you did. The bright orange color is pleasing.
  • Cut the carrots into 1-1 1/2 inch segments. Cut thick ends in half.
  • The little bit of cayenne pepper in this recipe does not make it spicy or hot. It adds a bit more flavor dimension.
  • This recipe can be prepared ahead of time and stored in an airtight container in the fridge. When ready to serve, heat the glazed carrots in a skillet over medium-low heat or in the microwave.
