Mini desserts are my favorite. This lemon cheesecake doesn’t disappoint. Thanks for a smooth and creamy recipe.

Combine graham cracker crumbs, sugar, and melted butter in a small bowl. Divide evenly in pan and press down to create the crust.

Beat cream cheese until smooth. Beat in sugar, lemon juice, lemon zest, and egg. Fill each cheesecake slot and bake. Refrigerate.

Melt butter and allow to cool. Whisk sugar and egg yolks until smooth.

Whisk in lemon juice, lemon zest, and melted butter and microwave until the mixture is thick.

Remove cooled cheesecakes and top with a tablespoon of curd and a small lemon wedge. Serve immediately.
