Tater Tot Breakfast

Enjoy this tasty make-ahead Tater Tot Breakfast Casserole with plenty of eggs, potatoes, and pork sausage blanketed in layers of cheddar cheese and Monterey Jack Cheese.

Cook the pork sausage, onions and bell pepper first. Then, layer frozen tater tots in the bottom of a prepared baking dish. Cover with half of the cheeses.

Whisk together the milk, eggs, kosher salt, and ground black pepper. Pour the mixture over the cheese, spoon the sausage mixture, and top with remaining tater tots.

Bake, sprinkle with the rest of the cheese halfway, then finish baking.
