Quick and Easy Traditional Rice Pilaf

Ingredients

  • 2 boil in bags jasmine rice
  • 1 cup frozen peas
  • 1/3 cup carrots matchstick cut
  • 1/4 cup chopped fresh parsley
  • 3 green onions chopped
  • 2 tablespoon butter melted
  • 2-4 tablespoons chicken broth
  • Salt & pepper to taste

Instructions

  • Cook jasmine rice according to box instructions.
  • Meanwhile place peas and carrots in small microwavable bowl. Add two tablespoons of water, cover with vented plastic wrap and microwave for 2-3 minutes or until tender. Drain well.
  • Pour cooked jasmine rice in serving dish and fluff with fork. Add cooked peas and carrots, parsley, green onions and melted butter. Stir in small amounts of chicken broth just to give it a little moisture. It helps the rice to separate and gives it a little flavor boost.
  • Season with salt & pepper to taste.

Notes

If you do not want to use the boil in bags use 1 cup of jasmine rice in 2 cups of low sodium chicken broth. Bring broth to a boil. Stir in rice. Cover with tight fitting lid; reduce heat and simmer for fifteen minutes or until liquid is absorbed and rice is tender.
