Ingredients

  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1/2 cup creamy peanut butter
  • 3/4 cup granulated sugar
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • 3 medium overripe bananas mashed
  • 1 cup semi-sweet chocolate chips optional

Instructions

  • Preheat the oven to 350 degrees. Grease a 9X5-inch loaf pan with butter or shortening.
  • Whisk the flour, baking soda, and salt in a medium bowl and set it aside. In a large bowl, combine the melted butter, peanut butter, sugar, eggs, vanilla extract, and mashed bananas.
  • Add the dry ingredients to the wet ingredients and stir just until combined. Fold in the chocolate chips.
  • Pour the batter into the prepared loaf pan and bake for 45-50 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs. 
  • Allow the loaf to cool for 10 minutes before inverting onto a wire rack to fully cool.

Notes

  • For best results, use really overripe bananas. This is a great recipe to use for those overripe bananas that you froze. Just let them thaw in the fridge overnight.
  • Creamy (not all-natural) peanut works best in this recipe.
  •  Do not overmix the dough. Mix just until the ingredients are incorporated. Overmixing the dough can result in tough bread.
  • If you want to add chocolate chips to the top before baking, cut a parchment paper overhang for the loaf pan for ease in getting the bread out of the pan without smooching the chips.
  • If the top of the bread browns too much while baking, cover loosely with aluminum foil.
  • Store wrapped in plastic wrap or in a zip lock storage bag on the counter for up to 4 days. See more below about freezing this bread.
