Rotel Cheese Dip Recipe

A quick and easy cheesy sausage and tomato dip that can be prepared in a crock pot, on the stovetop, or in the microwave.  This amazing dip is a gameday staple, and it is always a hit with friends and family.

Ingredients

  • 1 lb. ground sausage see notes
  • 2 tablespoons taco seasoning
  • 1 10 ounce can Rotel tomatoes
  • 1 15 ounce can salsa style tomatoes (see notes)
  • 16 ounces cubed Velveeta cheese

Instructions

  • Brown the ground sausage over medium heat.
  • Add it to a crock pot with the taco seasoning, Rotel Tomatoes, salsa-style tomatoes, and Velveeta cheese. Cover and turn to high heat. 
  • Cook for 2 hours or until the cheese is melted and the dip is hot.

Notes

  • Stovetop Method - Brown the ground sausage or hamburger and drain any excess grease.  Add the taco seasoning, Rotel tomatoes, salsa-style tomatoes, and Velveeta Cheese to the skillet. Cook over medium-low heat until melted and hot, stirring frequently.
  • Microwave Method - Brown the ground sausage or hamburger and drain any excess grease.  Add the ground sausage, Rotel tomatoes, salsa-style tomatoes, and Velveeta Cheese to a microwave-safe container or bowl.  Heat for about 3 minutes or until the cheese is melted and the dip is heated through.
  • I like to use Jimmy Dean All Natural Pork Sausage, but any mildly flavored pork sausage works well, including hot.  Feel free to substitute ground beef or a mixture of the two.
  • Canned salsa-style tomatoes are in the same aisle as the other canned tomatoes.  If they are difficult to find, add another can of Rotel Tomatoes with green chilies or an equivalent amount of your favorite tomato-based jarred salsa.
  • Once the cheese is melted and the dip is hot in the crock pot, turn the crock to warm.
  • If cooking on the stovetop or in the microwave, this dip can be reheated multiple times.
  • Store leftovers in an airtight container in the fridge for up to 4 days.  Or freezer for up to 3 months when stored in a heavy-duty freezer container.
