Ingredients
1lbfrozen shoestring potatoes
3tablespoonsunsalted butter
2clovesgarlic minced
½teaspoonkosher salt
¼teaspoonfresh ground black pepper
¼cupgrated parmesan cheese
1tablespoonchopped fresh parsley
Instructions
Cook the shoestring potatoes according to the package instructions until crispy.
Meanwhile, in a small saucepan over low heat, melt the butter. Add the minced garlic, salt, and pepper, cooking for 1 minute while stirring constantly. Remove the pan from the heat and stir in 2 tablespoons of Parmesan cheese until it is melted.
Add the cooked fries to a large bowl. Drizzle the warm butter mixture over the top and toss to coat. Sprinkle with Parmesan Cheese and chopped fresh parsley. For best results serve promptly.
Notes
For optimal flavor, use freshly grated Parmesan Cheese.
As with most fries, enjoy these promptly while they are hot and crispy.
You can substitute garlic powder for fresh minced garlic, although the fresh garlic really smells and tastes fabulous.
Feel free to make your own homemade fries with Russet potatoes, but soak them in a large bowl of cold water for 30 minutes to draw out the starch. Then drain well and dry with paper towels or a kitchen towel. Place them in a single layer on a baking sheet and bake for 15-20 minutes or until golden brown and crispy.
This recipe also works well with sweet potato fries.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or the air fryer.
