Ingredients
4chicken cutlets
⅓cupall-purpose flour
1teaspoondried Italian seasoning
1teaspoongarlic powder
½teaspoonsalt
½teaspoonfreshly ground black pepper
1largeegg
1tablespooncold water
½cuppanko breadcrumbs
¼cupgrated Parmesan cheese
cooking spray
1½cupsmarinara sauce
¾cupshredded mozzarella
chopped fresh basil
Instructions
Preheat oven to 400°F. Cover a large baking sheet with parchment paper.
Set up your breading stations with three shallow bowls. One with the flour, Italian seasoning, garlic powder, salt, and freshly ground black pepper. One with the egg and water, and the final one with panko breadcrumbs and Parmesan cheese.
Dredge the chicken filets in the flour, then in the beaten egg mixture, and then through the breadcrumb mixture.
Place the breaded chicken cutlets in a single layer on the prepared baking sheet. Spray lightly with cooking spray or mist with avocado oil. Bake for 15 minutes or until crispy and cooked through. Chicken is done when it reaches an internal temperature of 165 degrees,
Remove the baking sheet from the oven and top with a layer of marinara followed by a layer of mozzarella.
Return the baking sheet to the oven for 3-5 minutes or until the cheese melts. Top with chopped fresh basil or basil ribbons.
Notes
Store leftovers in an airtight container for up to 3 days.
Reheat in an air fryer at 375°F for 13 minutes or until heated through.
