Ingredients
Graham Cracker Crust
1½cupscrushed graham cracker crumbs
6tablespoonsbutterunsalted or salted
2tablespoonsgranulated sugar
Cherry Delight Filling
8ouncesblock cream cheese full-fat
1teaspoonvanilla extract
¾cuppowdered sugar
1½cupswhipping cream
1(21-ounce) canpremium cherry pie filling
Instructions
Mix the crushed graham crackers with the butter and sugar. Press it into a greased 9x9-inch baking dish.
Using a stand mixer with the paddle attachment on medium speed, beat the cream cheese, vanilla extract, and powdered sugar until smooth and creamy.
In a separate bowl using a hand mixer on medium beat the whipping cream until stiff peaks form.
Fold the whipped cream into the cream cheese mixture.
Spread the cream cheese mixture over the graham cracker crust using an offset spatula. Carefully spoon the cherries over the whipped cream mixture, cover, and refrigerate for at least 4 hours up to overnight.
Notes
For ease in cutting refrigerate for at least 4 hours up to overnight.
Rinse and dry the knife between cuts for the cleanest slices. Use a small spatula for those tight corners.
Store double-covered in the refrigerator for up to 4 days.
