Ingredients

  • 1 small bunch of cilantro with most of the stems removed about 1/2 cup
  • 1/2 of a red onion quartered
  • 2 cloves of garlic
  • 1 jalapeno stem removed
  • 1 can 28 ounce fire roasted diced tomatoes
  • 1 lime juiced
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon smoked paprika
  • 1 pinch cayenne
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

  • Combine cilantro, red onion, garlic and jalapeno in food processor fit with the chopping blade. Pulse several times until finely chopped.
  • Add tomatoes, lime juice, cumin, paprika, cayenne, salt and pepper. Pulse several more times until desired consistency.

Notes

You can substitute 3 large fresh tomatoes coarsely chopped for the canned tomatoes.
If you like mild salsa remove the seeds from the jalapeno.
