Ingredients

  • 3 tablespoons extra virgin olive oil
  • ½ medium yellow onion finely diced (about ½ cup)
  • 4 garlic cloves minced
  • 2 teaspoons Italian seasoning
  • 28 ounces crushed tomatoes
  • 2-3 tablespoons tomato paste see notes
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Chopped fresh parsley

Instructions

  • Heat the olive oil over medium heat in a small Dutch oven or heavy pot. Add the onion and cook for 3-4 minutes or until soft.
  • Reduce the heat to low. Add the garlic and Italian seasoning. Cook for 1 minute while stirring constantly.
  • Stir in the crushed tomatoes and tomato paste. Simmer over low heat for 15-20 minutes.
  • Season with salt and freshly ground black pepper to taste.
  • Sprinkle with chopped fresh parsley, basil, or thyme before serving.

Notes

  • Store in an airtight container in the refrigerator for up to 3 days. 
  • Reheat on the stovetop over low heat or in the microwave at reduced power.
