Ingredients

  • 12 ounces penne pasta
  • lbs boneless skinless chicken breasts cut into bite size pieces
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 2 tablespoons olive oil
  • cup sundried tomatoes well drained
  • 3 cloves garlic minced
  • ½ teaspoon Italian seasoning
  • cup low-sodium chicken broth
  • 1 cup heavy cream warmed to room temperature
  • ½ cup grated Parmesan Cheese plus more for garnish
  • ¼ teaspoon red pepper flakes
  • 2 tablespoons torn or chopped fresh basil

Instructions

  • Bring a large pot of salted water to boil. Add the pasta and cook al dente. Drain well in a colander.
  • Meanwhile, generously salt and pepper the chicken. Heat the olive oil in a large skillet over medium heat. Brown the chicken until cooked through. Remove the chicken to a plate leaving any fat in the skillet.
  • Reduce the heat to low and add the sundried tomatoes, garlic, and Italian seasoning. Cook for 2 minutes, stirring frequently.
  • Add the chicken broth and simmer for 3-4 minutes. Slowly stir in the heavy cream, Parmesan cheese, and red pepper flakes. Add the chicken, pasta, and basil to the skillet and toss to combine.
  • Garnish with more basil and grated Parmesan cheese.

Notes

  • For optimal flavor and texture, cook the pasta al dente according to package instructions. That means it is slightly firm with a little bite to it.
  • Reserve 1/2 cup or so of pasta water. Use it in 1-2 tablespoon increments to thin the pasta sauce if needed.
  • Warm the cream to room temperature by placing it in a microwave-safe measuring cup and heat it for 30-second intervals at 50% power until warm.
