Ingredients
12ouncespenne pasta
1¼lbsboneless skinless chicken breastscut into bite size pieces
½teaspoonsalt
¼teaspoonfreshly ground black pepper
2tablespoonsolive oil
⅔cupsundried tomatoes well drained
3clovesgarlic minced
½teaspoonItalian seasoning
⅔cuplow-sodium chicken broth
1cupheavy creamwarmed to room temperature
½cupgrated Parmesan Cheeseplus more for garnish
¼teaspoonred pepper flakes
2tablespoonstorn or chopped fresh basil
Instructions
Bring a large pot of salted water to boil. Add the pasta and cook al dente. Drain well in a colander.
Meanwhile, generously salt and pepper the chicken. Heat the olive oil in a large skillet over medium heat. Brown the chicken until cooked through. Remove the chicken to a plate leaving any fat in the skillet.
Reduce the heat to low and add the sundried tomatoes, garlic, and Italian seasoning. Cook for 2 minutes, stirring frequently.
Add the chicken broth and simmer for 3-4 minutes. Slowly stir in the heavy cream, Parmesan cheese, and red pepper flakes. Add the chicken, pasta, and basil to the skillet and toss to combine.
Garnish with more basil and grated Parmesan cheese.
Notes
For optimal flavor and texture, cook the pasta al dente according to package instructions. That means it is slightly firm with a little bite to it.
Reserve 1/2 cup or so of pasta water. Use it in 1-2 tablespoon increments to thin the pasta sauce if needed.
Warm the cream to room temperature by placing it in a microwave-safe measuring cup and heat it for 30-second intervals at 50% power until warm.
