Ingredients
2tablespoonsbutter
1medium onion finely chopped
3clovesgarlic minced
¼teaspoonred pepper flakes
1cupvodka
2½tablespoonstomato paste
128 ounce can whole tomatoes
12ouncespenne pasta
⅔cupheavy cream
¾cupgrated Parmesan Cheeseplus more for garnish
kosher salt and fresh ground black pepper to taste
fresh chopped basil or parsley
Instructions
Melt the butter in a large skillet over medium heat. Add the onions and cook 4-5 minutes or until soft. Stir several times. Reduce the heat to low, add the garlic and red pepper flakes, and cook for 1 minute, stirring constantly.
Carefully add the vodka. Stir in the tomato paste, then add the tomatoes, crushing with your hands as you add them. Simmer for 20 minutes, stirring several times.
Meanwhile, cook the pasta al dente according to the box instructions and drain well.
Reduce the heat on the sauce to very low and add the cream and the parmesan cheese. Add cooked pasta to the pan and stir to combine.
Season with salt and fresh ground black pepper to taste. Sprinkle with fresh basil or parsley and a little more grated Parmesan Cheese.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days.
Because of the heavy cream, I do not recommend freezing this dish.
