Ingredients
2tablespoonsolive oil
3mediumbell peppers (assorted colors), sliced into ½ inch strips
2mediumyellow onions, sliced into ½ inch wedges
3clovesgarlic, minced
1-2tablespoonsfresh herbs (thyme, basil, and parsley)
salt to taste
freshly ground black pepper to taste
Instructions
Heat the oil in a large skillet over medium heat.
Add the peppers and onions. Cook for 12-15 minutes or until lightly charred and crisp-tender, stirring frequently.
Reduce the heat to low and add the garlic and fresh herbs, stirring frequently.
Season with salt and freshly ground black pepper to taste.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheat in the microwave at 50% power for short increments until warm.
