Ingredients
1 ½cupsall-purpose flour
1teaspoonbaking powder
¼teaspoonsalt
½cupunsalted buttersoftened
⅔cupgranulated sugar
1large egg
2teaspoonsvanilla extract
Instructions
Preheat oven to 350°. Cover a large baking sheet with parchment paper.
Whisk the flour, baking powder, and salt in a medium bowl.
Using a stand mixer with the paddle attachment or a hand-held mixer, cream the butter and sugar until light and fluffy. Reduce the speed to low and add the egg and vanilla extract. Beat just until combined.
Stir the flour mixture into the butter mixture in several increments, just until incorporated. Cover and refrigerate the dough for 30-45 minutes.
Using a 1½-tablespoon scoop, drop the dough in rounded scoops onto the prepared baking sheet. Using a small piece of parchment paper, press the cookies to about ⅓-inch thick.
Bake for 10 minutes or until set and very lightly browned on the bottom. After 5 minutes, remove the cookies and let them cool on a wire rack.
