Ingredients
9ouncesthick-cut bacon, diced
3clovesgarlic, minced
2largeeggs
2largeegg yolks
1cupgrated Parmesan
12ouncesspaghetti pasta
2tablespoonschopped fresh parsley
salt to taste
freshly ground black pepper to taste
Instructions
Cook the bacon over medium heat in a large skillet until crispy. Using a slotted spoon, remove to paper towels to drain. Remove all but 1½ tablespoons of bacon grease from the skillet and discard. Cook the garlic in the skillet over low heat for a minute.
In a medium bowl, whisk the eggs, egg yolks, and Parmesan cheese.
Meanwhile, bring a large pot of lightly salted water to a boil. Add the spaghetti and cook al dente according to package instructions. Reserve a cup of pasta water. Drain the pasta well.
Now working fairly quickly, add the hot cooked pasta to the skillet with the bacon fat, bacon, and garlic, tossing quickly to coat. Beat the egg mixture again for a few seconds. Turn off the heat, then slowly pour in the egg-parmesan mixture and a splash or two of the pasta water while tossing frequently with the other hand. Once the egg mixture is fully incorporated, add more pasta water till the desired consistency is reached.
Sprinkle with fresh herbs and serve promptly.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days.
To reheat, remove the carbonara from the refrigerator and let it warm to room temperature for about 30-40 minutes. Then heat a skillet over low and add the leftover pasta. Toss the pasta to warm, adding 1-2 tablespoons of reserved pasta water as needed while you are tossing. For best results, serve promptly.
