¼teaspoonsalt

Instructions
Preheat the oven to 400° F. Line a 12-count standard muffin tin with paper liners.
Whisk the flour, ground cinnamon, ground ginger, ground cloves, baking powder, baking soda, and salt together in a medium bowl.
In a large bowl, combine the eggs, mashed sweet potato, shredded carrots, vegetable oil, brown sugar, and vanilla extract.
In another medium bowl, stir the brown sugar, granulated sugar, ground cinnamon, and salt. Stir in the melted butter until smooth. Use a fork to stir in the flour until the mixture forms large crumbs. Set the mixture aside for a few minutes.
Stir the flour mixture into the sweet potato mixture. Mix just until combined. Fold in the chopped walnuts, if using.
Using a 3-tablespoon cookie scoop, divide the batter into the prepared pan. Top with the crumb mixture and gently press it down so it sticks to the batter.
Bake the muffins for 5 minutes. Then, reduce the oven to 350°F. Bake for an additional 10-12 minutes, or until a toothpick inserted in the center of the muffin comes out clean or with a few moist crumbs.
Notes
Store the muffins in an airtight container at room temperature for up to 4 days.
Freeze in a freezer-safe container for up to 3 months. Thaw in the same container at room temperature for several hours.
