Ingredients
2sliceswhite bread
1slicewhite American cheese slices
1sliceyellow American cheese slices
2slicesthinly sliced deli ham
1large egg
1tablespoonmelted butter
kosher salt and fresh ground black pepper
Instructions
Place one slice of white American on one side of the bread and place one slice of yellow American on the opposite slice. Top each side with a thin piece of honey ham. Have sandwiches assembled so as you remove the eggs from the pan you are ready to go.
Cook one egg over easy per sandwich. Sprinkle with a little kosher salt and fresh ground black pepper. Remove from the pan without over cooking and gently add one to each white American side. Add a pinch of salt and pepper. Bring both sides of the sandwich together. Do not press down or you will break the yolk.
Heat skillet over medium low heat. Brush each sandwich with melted butter. Place butter side down in skillet. Brush the top with melted butter. Cover loosely with aluminum foil Cook until the bottom is browned. Flip and cook until the other side is browned and cheese is gooey and melted.
Notes
For a change of pace top that sandwich with lettuce, arugula, tomato, onion, or mayo.
If you like runny yolks don't push down on the sandwich. It will all come together as everything melts and browns like an egg in a grilled cheese sandwich.
Cover the skillet loosely with foil so the cheese melts around the egg and is ready when the bread browns.
