Parmesan Pasta Recipe

A delectable creamy garlic Parmesan Pasta that is made easy in one pot.  The perfect side dish for grilled chicken, roasted pork tenderloin or chicken spiedini.

Ingredients

  • 2 tablespoons butter
  • 3 cloves garlic minced
  • 3 cups low sodium chicken broth
  • 1 cup milk
  • ½ cup heavy cream
  • 12 ounces linguine or fettuccine pasta
  • ½ cup freshly grated Parmesan cheese
  • salt and pepper to taste
  • 1 tablespoon chopped fresh parsley or 1 teaspoon dried

Instructions

  • Melt butter in a large pot or skillet over medium low heat.  Add garlic and cook for 1 minute stirring constantly.
  • Add chicken broth, milk and cream.  Bring to low boil.  Add pasta and gently boil until tender; 15-20 minutes while stirring the noodles several times.  Reduce heat to low and stir in the Parmesan Cheese until melted.
  • Sprinkle with fresh parsley and serve.

Notes

  • If the pasta becomes too thick, add a little chicken broth, milk, and cream in the same proportions as the recipe. It is hard to mess this one up.
  • Cook the pasta over a very low boil while stirring frequently. Keep the pasta under the liquid, adding more chicken broth, milk, and cream in the same recipe proportions if necessary.
  • Fresh spinach or frozen peas can be added in the last 1-2 minutes of cooking. 
  • Both rotisserie-cooked chicken and skillet sautéed lemon shrimp are delicious when added to the pasta upon completion.
  • Store leftovers in an airtight container in the fridge. Reheat in the microwave at reduced power or on the stovetop over low heat.
