Ingredients
1tablespoonolive oil
1medium yellow onion
3lbsYukon Gold potatoes cut into bite-sized pieces
1½lbssmoked sausage cut into ⅓ inch round
1lbfresh green beans cut into 1-inch segments
½cupbutter
½teaspoonwoodfired garlic powder
1tablespoon Cajun or Creole seasoning
½teaspoonfreshly ground black pepper
salt to taste
Instructions
Heat the olive oil in a medium skillet. Add the onion and cook until soft, stirring frequently.
Add the potatoes to a crockpot and sprinkle with a teaspoon of Creole seasoning. Add the sauteed onions and sprinkle with another teaspoon of Creole seasoning.
Add the smoked sausage, green beans, butter, and remaining Creole seasoning, woodfired garlic powder, and freshly ground black pepper.
Cook on low for 6 hours or high for 4 hours or until the potatoes and green beans are tender.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheat in the microwave at reduced power for short intervals until warm.
