- Potatoes: Yukon Gold are my go-to potatoes for this recipe. Russet potatoes will break down too much.
- Smoked sausage: You can use Andouille sausage, smoked chicken sausage, or Polska Kielbasa.
- Butter: Unsalted or salted butter. If you use salted butter, cut back on any added salt.
- Seasoning: Use no salt Cajun or Creole seasoning. For even more flavor, make homemade Creole seasoning.
How To Make Swamp Potatoes

- Sauté the onion in a bit of olive oil over medium heat.
- Add the potatoes to a crockpot and sprinkle with a bit of Creole seasoning. Add the sautéed onions and another sprinkle of seasoning.
- Add the smoked sausage, green beans, butter, and remaining seasonings.
- Cook on low for about 6 hours or high for about 4 hours or until the potatoes and green beans are tender.

- Cut everything into fairly uniform bite-sized pieces for even cooking.
- Cook just until the potatoes and green beans are tender. This varies from crockpot to crockpot. Some run hotter than others.
- Be quick but lift the lid once or twice to stir the mixture and check for tenderness.

This is a hearty meal in and of itself, but I often make sweet potato cornbread, corn muffins, or jalapeno cheddar beer bread. Other great choices are hush puppies, tomato and cucumber salad, and fried okra.

Ingredients
- 1 tablespoon olive oil
- 1 medium yellow onion
- 3 lbs Yukon Gold potatoes cut into bite-sized pieces
- 1½ lbs smoked sausage cut into ⅓ inch round
- 1 lb fresh green beans cut into 1-inch segments
- ½ cup butter
- ½ teaspoon woodfired garlic powder
- 1 tablespoon Cajun or Creole seasoning
- ½ teaspoon freshly ground black pepper
- salt to taste
Instructions
- Heat the olive oil in a medium skillet. Add the onion and cook until soft, stirring frequently.
- Add the potatoes to a crockpot and sprinkle with a teaspoon of Creole seasoning. Add the sauteed onions and sprinkle with another teaspoon of Creole seasoning.
- Add the smoked sausage, green beans, butter, and remaining Creole seasoning, woodfired garlic powder, and freshly ground black pepper.
- Cook on low for 6 hours or high for 4 hours or until the potatoes and green beans are tender.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat in the microwave at reduced power for short intervals until warm.
