These easy matcha cookies are all the rage, with crispy edges, soft centers, and a sweet and earthy flavor. One taste and you will be hooked, just like I was.

Matcha cookies are such an easy treat that you can prepare in about 30 minutes, or at least some of the cookies will be ready in about 30 minutes. Except for the matcha and white chocolate chips, the ingredients are all common pantry ingredients.
What is Matcha?
Matcha is Japanese dried green tea leaves finely ground into powder. You can use it in lattes and smoothies, and baked goods like cookies and cakes. It is high in antioxidants.
Ingredient Notes and Substitutions
See the complete list of ingredients below on the recipe card.
- Matcha: There are three types of matcha: culinary grade, premium grade, and ceremonial grade. For this matcha cookie recipe, I use culinary-grade.
- Butter: Unsalted or salted. If using salted butter, eliminate the added salt.
- Vanilla extract: Use the pure stuff, please.
- White chocolate chips: Use excellent-quality chocolate like Ghirardelli or Guittard. You can substitute semisweet chocolate chips.
How To Make Matcha Cookies
This is a summary version; for the complete list of ingredients and instructions, please refer to the recipe card below.
- Mix the flour, baking soda, salt, and sifted matcha in a medium bowl.
- Cream the butter, brown sugar, and granulated sugar.
- Add the eggs and vanilla extract. Mix on low just until combined. Scraping the bowl and beater down as needed.
- Add the dry ingredients to the wet mixture in several increments on low or stir speed. Mix just until combined, scraping the bowl and beaters down as needed. Stir in the white chocolate chips.
- Using a 1½ tablespoon scoop, drop the dough balls on a parchment-covered baking sheet with about 2 inches of space between them.
- Bake for 10-11 minutes.

Preparation Tips
- Cover your baking sheets with parchment paper or silicone baking mats. They help the cookies bake evenly, brown better, and lift off the cookie sheet without breaking.
- For optimum results, bake one sheet of cookies at a time. Use multiple cookie sheets or let the single cookie sheet cool before dropping more dough on it, as a warm cookie sheet can cause cookies to spread too fast.
- Do not overbake these cookies. They are at their best when they are soft.
