Ingredient Notes and Substitutions
See the recipe card below for the complete list of ingredients.
- Pumpkin puree: Use pure pumpkin puree, not pumpkin pie filling.
- Pumpkin pie spice: A blend of ground cinnamon, ginger, nutmeg, allspice, and cloves, or make it homemade.
- Milk: Whole dairy milk is best for lattes, but you can use oat, almond, or soy milk.
- Sweetener: We prefer maple syrup because of the warm notes of caramel, vanilla, and toffee, but you can substitute simple syrup or honey.
- Vanilla extract: Use the pure stuff, please.
- Coffee: I use Starbucks Dark Roast Premium instant coffee, but you can use any good-quality caffeinated or decaffeinated instant coffee brewed strong or Espresso powder.
- Whipped cream: Either freshly homemade or Reddi-wip.

How To Make A Pumpkin Spice Latte
This is a summary; for the complete list of ingredients and instructions, see the recipe card below.
- Whisk the pumpkin puree and pumpkin pie spice in a small saucepan over medium-low heat for a few minutes.
- Whisk in the milk and maple syrup, cooking until hot but not boiling.
- Remove from the heat and stir in the vanilla extract.
- Split the strong-brewed coffee between two cups. Divide the milk mixture between the cups.
- Top with whipped cream and a light dusting of pumpkin pie spice.

Tips for the Best Pumpkin Spice Latte
- Don’t skip the step of cooking the pumpkin. It cooks off the raw, earthy taste of the pumpkin, caramelizes the pumpkin, and blooms the pumpkin pie spice.
- Adjust the maple syrup to taste. My kids like their pumpkin lattes a lot sweeter than I do.
- For an iced pumpkin latte, do not heat the milk mixture after whisking it into the pumpkin. Use large solid ice cubes, not nugget ice, which melts faster and waters down the latte.
