This Skillet Sausage and Potatoes is about as simple and delicious as it gets!! It is full of healthy ingredients and is quick to fix. This is the perfect meal for the busy families.

This recipe is quick and easy with plenty of flavor and wholesome ingredients. It is seasoned lightly so as not to mask the wonderful flavors of such delectable food. I often use Aidell’s Chicken Sausage, but this was made with the Aidell’s Pineapple and Bacon Chicken Sausage. I hope you love this easy, no-frills one-pot recipe as much as we do!

- Potatoes: My go-to potatoes for this recipe are Yukon Gold, but you can use red potatoes.
- Sausage: Use a good-quality chicken sausage without nitrates or added preservatives.
- Bell peppers: Use any colored bell peppers. I love using an assortment for that beautiful color contrast and flavor.
- Cajun seasoning: I like a sprinkling of Cajun seasoning, which I find fairly mild, but you might prefer a little rosemary and garlic powder.

How To Cook Sausage and Potatoes

- In a large skillet over medium-low heat, add the olive oil. Add the potatoes and cook for about 20 minutes.
- Then add the onion and cook until the onions are tender and the potatoes are lightly browned.
- Add the sausage and bell peppers. Cook until the sausages are lightly browned and the vegetables are tender.
- Reduce the heat to low and add the garlic, cooking for an additional one minute. Season to taste with salt, pepper, and Cajun seasoning.

Preparation Tips For Success
- If the potatoes are taking a while to tenderize, cover the skillet with a loose piece of aluminum foil to speed up the cooking process.
- Cook the potatoes in the skillet until they are almost fork-tender, as it does not take long to cook the onions and peppers and brown the sausage.
- Season to taste with plenty of salt and pepper or whatever seasonings and spices you desire.

Ingredients
- 2 tablespoons olive oil
- 2 lbs Yukon Gold potatoes
- 1 medium yellow onion, diced
- 12 ounces chicken sausage links cut into 1/2 inch wide rounds
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- salt to taste
- Freshly ground black pepper to taste
- Cajun seasoning
Instructions
- In a large skillet over medium-low heat, add the olive oil. Add the potatoes and cook for about 20 minutes.

- Add the sausage and bell peppers. Cook until the sausages are lightly browned and the vegetables are tender, 5-7 minutes.
- Reduce the heat to low and add the garlic, cooking for 1 minute. Season to taste with salt, pepper, and Cajun seasoning.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Reheat in the microwave at 50% power for 1-minute increments until warm.
