- Pizza Dough: Many grocery stores sell ready-made pizza dough, or make your pizza dough from scratch.
- Cornmeal
- Chicken: Any cooked chicken works with this recipe. You can use grilled chicken, poached chicken, baked chicken, or roasted chicken. I used rotisserie chicken because it is easy, convenient, and delicious.
- Barbecue Sauce: You can use any barbecue sauce you like, but I prefer a sauce that is not too sweet and has a little kick, like the taste of Maulls or Gates barbecue sauce.
- Onion: Red onion
- Pepperoncinis
- Cheese: Mozzarella, cheddar, Monterey Jack, Pepper Jack, smoked cheddar, provolone, Parmesan, and Gouda cheese. If using Parmesan cheese, add about ¼ cup grated Parmesan with a mix of one or more other cheeses.

How to Make BBQ Chicken Pizza

- Pat the pizza dough out into a 12-inch circle. Prebake the crust in a preheated oven. Let the pizza dough cool for a few minutes.
- In a medium bowl, stir the diced chicken breast with barbecue sauce and set aside.
- Spread the barbecue sauce on the dough and sprinkle mozzarella cheese on top.
- Sprinkle the pizza with the diced chicken that was set aside. Top with red onions and pepperoncini. Sprinkle with cheddar and Monterey Jack cheese.
- Bake for 13-15 minutes or until the cheese is melted and the crust is golden brown. Sprinkle with the chopped cilantro.
Preparation Tips
- Remove the dough from the packaging and place it in an olive oil-coated bowl. Cover the bowl with a towel and put it in a warm area of the kitchen (but not hot). Let the dough warm for a couple of hours, flipping the dough halfway through the warming period.
- Slice the red onion thinly. I like to use my mandoline for this task.

Ingredients
- 1 lb. pizza dough homemade or store-bought
- 1 heaping tablespoon cornmeal
- 2½ cups diced cooked chicken
- ⅔ cup barbecue sauce
- ¼ medium red onion thinly sliced (see notes)
- ⅓ cup sliced pepperoncinis
- 1½ cups shredded mozzarella cheese
- ½ cup shredded cheddar cheese
- ½ cup shredded Monterey Jack cheese
- 2 tablespoons chopped fresh cilantro
Instructions
- Preheat oven to 450 degrees.
- Sprinkle the cornmeal on a pizza stone or pizza pan. Pat the pizza dough out into a 12-inch circle. Prebake the pizza crust for 5-6 minutes in the preheated oven. Let the pizza dough cool for a few minutes.
- In a medium bowl, stir the diced chicken with ⅓ cup barbecue sauce and set it aside. Spread the dough with the remaining ⅓ cup barbecue sauce and sprinkle with the mozzarella cheese. Sprinkle the pizza with the diced chicken.
- Top with red onions and pepperoncini. Sprinkle with cheddar and Monterey Jack cheese.
- Bake for 13-15 minutes or until the cheese is melted and the crust is golden brown. Sprinkle with the chopped cilantro. Let the pizza cool for a few minutes before slicing.
Notes
- Store leftovers in an airtight container or zipper storage bag in the refrigerator for up to 3 days. Fewer days, depending on how old your chicken was. Reheat in the microwave at reduced power or on the stove.
- First, cool completely, then wrap the individual slices in plastic wrap, place them in a zipper freezer bag, and freeze for up to 3 months. When ready to eat, remove as many slices as you like and thaw in the fridge overnight. Reheat in the microwave at reduced power until warm or on the stove, covered with aluminum foil, at 375 degrees for about 10 minutes.
