Deliciously simple Barbecue Chicken Pizza combines your favorite bbq sauce, rotisserie chicken, thin sliced red onion, and oodles of melted mozzarella and cheddar cheese. Enjoy this easy pizza for movie night, game day, or pizza night.
How to make Barbecue Chicken Pizza
Sprinkle a little cornmeal on a pizza stone, baking sheet, or pizza pan. Pat the pizza dough out into a 12-inch circle. Prebake the crust for 5-6 minutes in a preheated oven. Let the pizza dough cool for a few minutes. In a medium bowl, stir the diced chicken breast with a little bit of barbecue sauce and set it aside. Then spread the dough with the barbecue sauce and sprinkle with the mozzarella cheese. Sprinkle the pizza with the diced chicken that you set aside.
Top with the red onions and pepperoncini. Sprinkle with the cheddar and Monterey Jack cheese. Bake for 13-15 minutes or until the cheese is melted and the crust is golden brown. Sprinkle with the chopped cilantro. Let the pizza cool for a few minutes before slicing.
Helpful recipe tips
- Many grocery stores sell ready-made homemade pizza dough. Or make your own pizza dough from scratch.
- Remove the dough from the packaging and place it in an olive oil-coated bowl. Cover the bowl with a towel and place it in a warm area of the kitchen (but not hot). Let the dough warm for a couple of hours, flipping the dough halfway through the warming period.
- You can use any barbecue sauce you like, but I prefer a sauce that is not too sweet with a little bit of a kick, like the taste of Maulls or Gates barbecue sauce.
- Any cooked chicken works with this recipe. You can use grilled chicken, poached chicken, baked chicken, or roasted chicken. I use rotisserie chicken because it is easy, convenient, and delicious.
- Slice the red onion thinly. I like to use my mandoline for this task.
- Cheeses that work well with this recipe include mozzarella, cheddar, Monterey Jack, Pepper Jack, smoked cheddar, provolone, Parmesan, and Gouda cheese. If using Parmesan cheese, add about 1/4 cup grated Parmesan with a mix of one or more other cheeses.
- Store leftovers in an airtight container or zipper storage bag in the refrigerator for up to 3 days. Fewer days, depending on how old your chicken was. Reheat in the microwave at reduced power or in the stove.
How to freeze this pizza
First, cool completely, then wrap the individual slices in plastic wrap, then place them in a zipper freezer bag and freeze for up to 3 months. When ready to eat, remove as many slices as you would like and thaw in the fridge overnight. Reheat in the microwave at reduced power until warm or in the stove covered with aluminum foil at 375 degrees for about 10 minutes.
