These cheesy mashed potatoes are extra creamy, perfectly seasoned, and flavorful with Gouda and Parmesan cheese. They are quick and easy to make, creating a great side dish for chicken, pork, and beef.

Ingredient Notes and Substitutions
See the complete list of ingredients on the recipe card below.
- Potatoes: Use Yukon Gold potatoes or Russet potatoes.
- Butter: Unsalted or salted. If using salted butter, reduce the amount of added salt to ¼ teaspoon.
- Milk: For a creamy texture, use whole milk.
- Sour cream: Use full-fat sour cream for the best flavor and texture.
- Garlic powder: I like to use Kinder’s woodfired garlic, but you can use any garlic powder.
- Cheese: I use Gouda and Parmesan, but you can use mild, sharp, or extra sharp cheddar, Edam, Havarti, or Monterey Jack.
How to Make Cheesy Mashed Potatoes
This is a summary version; for the complete list of ingredients and instructions, please refer to the recipe card below.
- Boil the potatoes in a large pot of salted water until tender. Drain the potatoes well.
- Add the unsalted butter, milk, sour cream, garlic powder, salt, and black pepper to the pot. Mash the potatoes with a handheld potato masher.
- Stir in half the cheese. Spoon the mixture into a casserole dish.
- Top with the remaining cheese and bake. Sprinkle with the chopped green onions.

Preparation Tips
- Use a potato masher or a potato ricer. If using a potato ricer, feed the well-drained potatoes through the potato ricer before adding the butter, sour cream, and milk.
- Do not use an electric mixer or food processor. They overwork the potatoes, and instead of fluffy potatoes, you will end up with gummy, gluey potatoes.
- Mash the potatoes while they are warm. They mash more easily and with greater consistency.
- Do not overbake the potato casserole. Overbaking it can dry the recipe out and change the overall texture.

Serving Suggestions
- Chicken: grilled marinated chicken breasts, ranch chicken, and chicken schnitzel.
- Pork: crockpot pork chops, grilled pork tenderloin, and air-fryer pork chops
- Beef: crockpot beef tips, oven-baked beef brisket, and classic meatloaf.
