Ingredient Notes and Substitutions
See the recipe card below for the complete list of ingredients.
- Chicken: Use chicken cutlets, pounded boneless, skinless chicken breasts, or thick boneless, skinless chicken breasts cut in half lengthwise.
- Pizza sauce: We love Smash Kitchen pizza sauce, but you can use your favorite brand.
- Bell peppers: Use any color bell pepper.
- Tomato: Use any sun-ripened tomato, sliced semi-thin. You can also use halved grape or cherry tomatoes.
- Pepperoni: I like the all-natural uncured pepperoni, but you can use your favorite brand, full-sized or mini.
- Cheese: Low-moisture whole milk mozzarella is best for pizza. You can substitute any shredded pizza blend cheese.

How To Make Pizza Chicken
This is a summary; for the complete list of ingredients and instructions, see the recipe card below.
- Brown the chicken on both sides in a little olive oil in a large skillet on the stovetop over medium heat.
- Spread pizza sauce over the chicken, then top with a little cheese, pepperoni, bell peppers, tomatoes, and more cheese.
- Bake for about 10 minutes or until the cheese melts and the chicken is cooked through.
- Sprinkle the dish with basil ribbons and serve.

Culinary Preparation Tips
- To make basil ribbons, stack the basil leaves and gently roll them into a cylinder-shaped cigar. Now, using a sharp knife, slice them crosswise, extra thin.
- Chicken is done when it reaches an internal temperature of 165°. An instant-read meat thermometer is a priceless kitchen tool.
- Add or swap out toppings with black olives, cooked sausage, cooked mushrooms, or sautéed onions.
Perfect Pairings
- Pasta: Parmesan pasta, garlic pasta, or angel hair pasta.
- Vegetables: roasted yellow squash, oven-roasted zucchini, or roasted broccoli.
- Salad: Italian salad, arugula salad, or spring mix salad.
