What is Rocket Salad?
Rocket salad is a salad made with arugula. It is generally coated with a light vinaigrette and may contain a little Parmesan or Feta and some nuts or seeds. Arugula is commonly referred to as “Rocket” lettuce. Its fresh, peppery taste makes a simple salad flavorful and refreshing. I love to serve it with grilled chicken and grilled shrimp.

- Vinegar: champagne, white wine vinegar, or red wine vinegar
- Olive: extra virgin
- Dijon mustard
- Honey
- Salt
- Black pepper: freshly ground is always best
- Arugula: organic baby arugula is best
- Nuts: pecans, walnuts, sliced almonds, or pine nuts
- Parmesan Cheese: shaved or grated

- Keep it simple and light. Rocket has a lot of flavor and tastes best when lightly dressed.

Ingredients

- 3 tablespoons extra virgin olive oil
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- 1/4 teaspoon kosher salt

Instructions
