This delicious Mexican Street Corn Salad, also known as elote salad, combines blackened corn, Cotija cheese, cilantro, and green onions tossed in a smoky, spicy, lime-mayonnaise-based dressing. It’s quick and easy, making it ideal for busy weeknights.

Ingredient Notes and Substitutions
See the recipe card below for the complete list of ingredients.
- Corn: I love using fresh corn for this recipe, but frozen corn works too. Just add it to the skillet frozen. It may need a couple more minutes to cook off any excess moisture and blacken.
- Mayonnaise: I love Duke’s mayo, but you can use your favorite brand.
- Lime juice: This is traditional, but you can substitute lemon juice for a similar zesty, bright flavor.
- Adobo sauce: You can find it in the Hispanic food section of most grocery stores. If you have trouble finding it, use a little of the sauce from a can of chipotle peppers. Store the remaining Chipotle peppers in adobo sauce in an airtight container in the refrigerator for up to a month, or freeze them for up to 3 months. You can substitute Tabasco-style chipotle hot sauce.
- Cotija cheese: A crumbly Mexican cheese. You can find it at most local grocery stores.
- Cilantro: For the best flavor and texture, use fresh cilantro.
