- Marjoram: It is a milder, sweeter, less intense relative of oregano. However, you can substitute oregano if needed or more convenient.
- Chicken broth: Use low-sodium so you can control the sodium content.
- Egg noodles: This recipe works with any short pasta shape, including penne, rotini, elbow macaroni, farfalle, fusilli, and cellentani pasta. However, I like the consistency, taste, and appearance of curly egg noodles.
- Chicken: Any cooked chicken works in this recipe, including roasted, poached, stewed, or grilled.
- Fresh herbs for garnish: Try parsley, thyme, or rosemary.

- If reserving some of this soup for later, remove the amount you are reserving from the batch before adding the egg noodles. Add the egg noodles when you reheat the soup. Bring the mixture to a gentle boil and add the egg noodles.
- Store leftovers in an airtight container in the fridge for up to 3 days. Reheat on the stovetop over low heat or in the microwave at reduced power.
- Use the carcass to make chicken stock. Freeze the cooled chicken stock in a freezer-safe container for up to 6 months.
- When freezing this soup, don’t add the egg noodles until ready to reheat and eat.

Ingredients
- 1½ tablespoons olive oil
- 1 medium yellow onion, chopped
- 2 ribs celery, chopped
- 3 large carrots, peeled and chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried marjoram
