How to Make Watermelon Salad

First, cut all your watermelon, cucumbers, and red onion and combine them in a large bowl. Then whisk together the olive oil, lime juice, and honey. Drizzle in the dressing and toss gently to coat. Sprinkle with crumbled feta and fresh mint. I usually pick a wide white bowl so the colors in this beautiful salad pop.

- Lime juice: Fresh is best. Lemon juice can be substituted for the lime juice.
- Watermelon: Seedless watermelon is the way to go. Most watermelons grown are considered seedless. Seedless means that the seeds are white edible seeds like those in a cucumber.
- Cucumber: English cucumbers and garden cucumbers work in this salad. If using garden cucumbers, remove the seeds before slicing.
- Feta: Buy a small block of feta cheese packed in brine and crumble it yourself. It will taste less salty and be less dry.
- Mint leaves: Other fresh herbs to try with this salad include fresh basil, thyme, and arugula.

Preparation Tips
- This salad is best prepared only a few hours in advance because watermelon and cucumbers are mostly water.
- Cut the watermelon into bite-sized 1-inch cubes.
- Sprinkle the mint and feta on right before serving.
- Fresh mint grows very well in gardens or flower beds. Our mint plant comes back every year. However, replace the plant every four years for the best flavor and aroma.

Watermelon Salad Recipe
Ingredients
- 2 tablespoons extra virgin olive oil
- 2 tablespoons lime juice
- 1 tablespoon honey
- 5 cups watermelon cubes
- 1 cup diced English cucumber
- ¼ cup chopped red onion
- ½ cup crumbled feta
- 3 tablespoons fresh mint leaves or mint ribbons
- salt to taste
- freshly ground black pepper to taste
Instructions
