Crescent Roll Breakfast Casserole is a treasure trove of cheesy eggs, browned ground pork sausage, and dried and fresh herbs, all on a puffy bed of crescent rolls. This dish is always a big crowd pleaser and great for long weekend and holiday brunches.

This casserole is quick and easy to prepare, but if time is tight, assemble it the night before and bake it in the morning.

- Pork sausage: Ground breakfast pork sausage, like Jimmy Dean or Bob Evans. We love the all-natural ones.
- Crescent rolls: I use original-flavored Pillsbury Crescent Rolls in the tube, but you can use any flavor.
- Milk: Whole is best, but I have used 2% in a pinch with good results.
- Shredded cheese: Use any cheese that melts well, such as cheddar, Gouda, Monterey Jack, Pepper Jack, Swiss, or Gruyere.
- Dried herbs: Such as thyme, rosemary, marjoram, and oregano.
- Fresh herbs: Try parsley, basil, dill, thyme, and rosemary.
How To Make Crescent Roll Breakfast Casserole

- Brown the pork sausage in a large skillet over medium heat. About halfway through the browning process, add the onion, and continue cooking until the sausage browns and the onion softens.
- Reduce the heat to low and add the garlic. Cook the garlic for 1 minute, stirring constantly.
- Spread the crescent rolls in the bottom of a 9×13-inch casserole dish, pinching the seams together. Spoon the sausage mixture over the crescent rolls.
- In a large bowl, whisk the eggs, milk, half the cheese, salt, black pepper, marjoram, and thyme. Pour the egg mixture over the sausage mixture. Top with the remaining cheese.
- Bake for 40 minutes or until set.


Make Ahead Instructions
If making this breakfast casserole a day ahead, pre-cook the crescent roll crust for 7-8 minutes at 375 degrees to prevent sogginess. Then add the sausage mixture and egg mixture. Cover well and refrigerate. Remove the casserole from the fridge 45 minutes before baking to bring it to room temperature. Follow the baking instructions in the recipe card below.

Serving Suggestions
There are so many great options, but here are a few of my favorites. I love to serve it with pan-fried potatoes or potato pancakes. It is equally delicious with fruit salad, chickpea salad, or broccoli bacon salad. Other great options are strawberry mimosas and Bloody Mary cocktails.

Ingredients
- 1 lb ground breakfast pork sausage
- 1 medium yellow onion, finely chopped
- 3 cloves garlic, minced
- 1 (8-ounce) tube refrigerated crescent rolls
- 8 large eggs
- 1 cup whole milk
- 2 cups shredded cheese (cheddar, gouda, Monterey Jack, Pepper Jack)
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
- 1 teaspoon dried marjoram
- 1 teaspoon dried thyme
- 1 tablespoon chopped fresh herbs (dill, thyme, rosemary, and parsley)
Instructions
- Preheat the oven to 375 degrees. Lightly grease a 9×13-inch baking dish.

- Reduce the heat to low and add the garlic. Cook the garlic for 1 minute, stirring constantly.

- In a large bowl, whisk the eggs, milk, half the cheese, salt, black pepper, marjoram, and thyme. Pour the egg mixture over the sausage mixture. Top with the remaining cheese.
- Bake for 20 minutes. Lower the oven to 350 degrees. Bake for 20-25 minutes or until set.
Notes
- Store leftovers in an airtight container in the refrigerator.
- Reheat in the microwave for short increments until warm.
