Key Lime Martini
- 1/4 cup vanilla vodka
- 1/4 cup key lime juice
- 1/4 cup half n half
- 1/4 cup simple syrup
- 1 tablespoon cream of coconut
- 4 lime rounds.
- Place all ingredients in blender. Add 4 – 5 cups of ice. Blend until smooth. Pour in martini glasses and garnish with lime rounds.
Simple syrup is made by pouring equal parts water and sugar in a saucepan. Heat until the sugar is completely dissolved stirring several times. Remove from heat and chill.
If just making one martini add one tablespoon each of vodka, lime juice, half n half, simple syrup and 3/4 teaspoon cream of coconut. Use about one cup of ice.
