- Fries: You can use any frozen or homemade French fries. I love the way the waffle fries hold the toppings.
- Bacon: I used Coleman naturally uncured hickory-smoked bacon, but any good-quality smoked bacon will work.
- Cheese: Pick any cheese that melts well and complements the dish, such as Monterey Jack, Cheddar, Colby Jack, or Pepper Jack.
- Ranch: Use your favorite bottled ranch or make it homemade.
- Adobo sauce: It’s a slightly sweet, tangy, rich sauce made with ground ancho and guajillo chiles. You can find them canned with chipotle peppers in the Hispanic food section. If you like things extra spicy, add some finely minced chipotle pepper. Use the chipotle peppers in Mexican Street Corn Pasta Salad or Charro Beans.
- Jalapenos: For a milder option, try pickled jalapeños.
How To Make Loaded Fries

- Bake the waffle fries on a baking sheet.
- Cook the bacon crispy. Find directions for oven-baked bacon here. It is so easy. Coarsely chop the bacon.
- Mix the ranch dressing with adobo sauce.
- Layer the fries with both cheeses and chopped bacon. Place the baking sheet in the oven till the cheese melts.
- Top with green onions and jalapeños, then drizzle with the chipotle ranch.


Preparation Tips For Success
- For ease, I use frozen French fries. They are pretty decent, and they cook up really crispy in a convection oven or in the air fryer.
- Bake the fries in a single layer for the most crispiness.
- Use a drizzle bottle to top the loaded fries with chipotle ranch.

Recipe Variations
- Barbecue Fries: Add pulled pork or shredded chicken, then drizzle with barbecue sauce.
- Taco Fries: Cook ground beef with taco seasoning in a skillet and sprinkle it on top of the cheese with the bacon.
- Poutine Fries: Replace the cheddar and pepper jack with cheese curds and top with brown gravy instead of chipotle ranch.
- Breakfast Fries: Add browned pork sausage and eggs, over easy or scrambled.


Loaded Fries
Ingredients
- 1 (24-ounce) bag frozen waffle fries
- seasoned salt to taste
- freshly ground black pepper to taste
- 6 slices bacon, crispy cooked and chopped
- ¾ cup ranch dressing
- 2 tablespoons adobo sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded pepper jack cheese
- 2 green onion, thinly sliced
- sour cream optional
- jalapeno rings optional
Instructions
- Season the waffle fries with salt and freshly ground black pepper. Bake the waffle fries according to package instructions. Meanwhile, cook the bacon crispy and chop it.
- Mix the ranch dressing and adobo sauce in a measuring cup with a spout.
- When the fries are done, top with both cheeses and the chopped bacon. Place the baking sheet in the hot oven for 3-5 minutes or until the cheese melts.
- Top with green onions and jalapeños, then drizzle with the chipotle ranch.
Notes
- Store leftovers in an airtight container in the refrigerator.
- Reheat in a preheated 400-degree oven for 5-7 minutes or just until hot.
