- Pork sausage: You can substitute turkey or chicken sausage.

How To Make Sausage Egg and Cheese Casserole

- Brown the sausage. When the sausage is about halfway browned, add the onion and bell pepper.
- Reduce the heat to low and add the garlic, thyme, marjoram, rosemary, and red pepper flakes. Stir and cook for a minute. Add the mixture to the bottom of the baking dish.
- Whisk the eggs, milk, salt, black pepper, and half the cheese. Pour the mixture over the sausage.
- Top with the remaining cheese and bake.

Ingredients
- 1 lb ground sausage
- 1 medium yellow onion, chopped
- 1 small green bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried marjoram
- ½ teaspoon crushed rosemary
- ¼ teaspoon red pepper flakes
- 10 large eggs
- 1 cup milk (whole or 2%)
- ½ teaspoon salt
- ½ teaspoon freshly ground black pepper
- 1 cup shredded cheddar cheese
- 1 cup shredded pepper jack cheese
Instructions
- Preheat the oven to 350 degrees. Grease a 9×13-inch baking dish.
- Brown the sausage in a large skillet over medium heat. When the sausage is about halfway browned, add the onion and cook for 2 minutes. Add the bell pepper and cook until the onion and bell pepper are soft.
- Reduce the heat to low and add the garlic, thyme, marjoram, rosemary, and red pepper flakes. Stir and cook for 1 minute. Add the mixture to the bottom of the prepared casserole dish.
- In a large bowl, whisk the eggs, milk, salt, black pepper, and ½ cup of each cheese. Pour the egg mixture over the sausage mixture. Sprinkle with the remaining cheese.
- Bake for 35-40 minutes or until lightly browned and set.
