Ingredient Notes and Substitutions
See the complete list of ingredients on the recipe card below.
- Potatoes: Yukon Gold are my go-to potatoes for this recipe. Russet potatoes will break down too much.
- Smoked sausage: You can use Andouille sausage, smoked chicken sausage, or Polska Kielbasa.
- Butter: Unsalted or salted butter. If you use salted butter, cut back on any added salt.
- Seasoning: Use no salt Cajun or Creole seasoning. For even more flavor, make homemade Creole seasoning.
How To Make Swamp Potatoes
This is a summary version; for the complete list of ingredients and instructions, please refer to the recipe card below.
- Sauté the onion in a bit of olive oil over medium heat.
- Add the potatoes to a crockpot and sprinkle with a bit of Creole seasoning. Add the sautéed onions and another sprinkle of seasoning.
- Add the smoked sausage, green beans, butter, and remaining seasonings.
- Cook on low for about 6 hours or high for about 4 hours or until the potatoes and green beans are tender.

Tips For Success
- Cut everything into fairly uniform bite-sized pieces for even cooking.
- Cook just until the potatoes and green beans are tender. This varies from crockpot to crockpot. Some run hotter than others.
- Be quick but lift the lid once or twice to stir the mixture and check for tenderness.

Serving Suggestions for Swamp Potatoes
This is a hearty meal in and of itself, but I often make sweet potato cornbread, corn muffins, or jalapeno cheddar beer bread. Other great choices are hush puppies, tomato and cucumber salad, and fried okra.

I have never heard of wood-fired garlic. Sounds great! Where does a person buy that? I love the flavor of that sausage you used in this recipe, but, if anyone is going to bite into a bone fragment or weird piece of gristle, it would be me. So, I will probably use a ham steak, cut into bite-sized pieces, instead. Your recipes all sound yummy!

Thank you, Pamela. I find Kinder’s woodfired garlic at Walmart but it is also available on Amazon.
