This delicious Fried Egg Breakfast Sandwich Recipe combines eggs, American cheese, and smoked ham layered between buttered slices of bread grilled to perfection. You can whip one together in just a few minutes, and it tastes like heaven!

You can easily customize these to suit your taste by swapping cheese or adding ham, crispy bacon, or cooked sausage patties. My family and I are huge breakfast nuts. We love eggs. We love them scrambled, easy over, hard-boiled, poached, and sunny side up. This breakfast sandwich is so quick and simple. If you like this recipe, try ham and cheese quiche, Denver omelet, and egg frittata.
Ingredient Notes and Substitutions
See the complete list of ingredients below on the recipe card.
- Bread: Use good quality bread. It does make a difference. Try it on hearty multi-grain bread, sourdough, whole wheat bread, bagels, or split English Muffins.
- Cheese: Don’t skip the cheese. It brings everything together and makes it taste even better. Try cheeses like cheddar, white American, Swiss, Havarti, Pepper Jack, Colby, or Monterey Jack.
- Ham: You can substitute bacon or sausage.
- Butter: Melted butter or mayonnaise makes the bread brown nicely and adds fabulous flavor. You can use salted or unsalted butter.

Fried Egg Sandwich
Ingredients
- 2 slices white bread
- 1 slice white American cheese slices
- 1 slice yellow American cheese slices
- 2 slices thinly sliced deli ham
- 1 large egg
- 1 tablespoon melted butter
- kosher salt
- freshly ground black pepper
Instructions
- Place one slice of white American on one side of the bread and one slice of yellow American on the other. Top each side with a thin piece of honey ham. Assemble the sandwiches so that, as you remove the eggs from the pan, you are ready to go.
- Cook one egg over easy per sandwich. Sprinkle with a pinch of kosher salt and freshly ground black pepper. Remove the eggs from the pan without overcooking and gently add one to each white American side of the bread. Add a pinch of salt and black pepper. Bring both sides of the sandwich together. Do not press down, or you will break the yolk.
- Heat skillet over medium-low heat. Brush each sandwich with melted butter. Place butter side down in skillet. Brush the top with melted butter. Cover loosely with aluminum foil. Cook until the bottom is browned. Flip and cook until the other side is browned and the cheese is gooey and melted.
