This incredible Strawberry Salsa combines fresh berries, sweet red bell pepper, red onion, and jalapeno in a little sweetened lime juice. Enjoy this sweet spring and summer treat with chips, tacos, grilled fish, or meats.

- Strawberries: Fresh, red, ripe strawberries are the way to go here. Frozen strawberries will produce too much moisture.
- Bell pepper: I love the sweetness of the red bell pepper, but you can use any colored bell pepper.
- Onion: Again, I love the sweet notes of the red onion, but you can use any sweet onion.
- Jalapeno: Look for jalapenos that are smooth and green all over. They should be free of striations. Stay away from peppers with white lines and flecks, as these peppers are older and hotter.
- Cilantro: Use fresh cilantro, not dried.
Skip The Food Processor
Skip the food processor and chop the ingredients finely with a sharp knife. Toss all the ingredients together. Season with freshly ground black pepper and lightly salt. Chill for a couple of hours so all the flavors meld.

Ingredients
- 1 lb fresh strawberries, hulled and finely chopped
- 1 red bell pepper, finely chopped
- ½ cup finely chopped red onion
- 1 small jalapeno pepper, stem removed and finely chopped
- 1 lime, zested and juiced
- 2 tablespoons honey
- ¼ cup chopped fresh cilantro
- pinch of salt
- freshly ground black pepper to taste
Instructions
- Toss all the ingredients together in a medium bowl. Season with the salt and freshly ground black pepper to taste.
- Cover and chill for at least 2 hours so all the flavors meld.
