Ingredient Notes and Substitutions
See the complete list of ingredients on the recipe card below.
- Fresh Green Beans: I like French-style green beans because they are longer, more slender, and more tender than regular green beans. But regular green beans can be substituted in a pinch.
- Butter: Unsalted or salted.
- Almonds: Use sliced or slivered. For the best flavor, toast until fragrant.
- Seasonings: Fresh garlic, lemon juice, kosher salt, and freshly ground black pepper.

How to Make Green Beans Almondine
This is a summary version; for the complete list of ingredients and instructions, please refer to the recipe card below.
- Blanch the green beans and plunge them into an ice bath.
- In a medium skillet, heat olive oil and butter over medium heat. Toss in the almonds and cook until lightly browned.
- In the same skillet, heat more olive oil and butter over medium heat. Add the green beans and cook. Reduce the heat to low, add the garlic, and cook for a minute. Add lemon juice and cook another minute.
- Add the almonds back to the skillet and toss to combine.

Preparation Tips
- For optimal flavor, use fresh green beans. I like haricot verts or French-style green beans. They are slightly longer and skinnier than regular green beans, harvested earlier, and more tender.
- Don’t skip the ice bath. It is essential to stop the cooking process.
- Season with kosher salt, freshly ground black pepper, lemon zest, or seasoned salt.
