This fantastically simple Traditional Haluski Recipe combines onions, bacon, garlic, and cabbage, all cooked in butter and tossed with egg noodles or dumplings. This delectable taste treat comes together so quickly and easily, making it one of our favorite side dishes.
What is Haluski?
I love Haluski. I mean, really, who doesn’t? This noodles and cabbage dish is commonly referred to as Haluski. Haluski is a Noodles and Cabbage dish of Polish and Slovakian origin, although there is some disagreement from the Ukrainians and Hungarians. No matter where it originated from, it is delicious comfort food. It is sure to be a hit with your family and friends. Now I don’t think that the original version had bacon in it, but you know me well. Savory gives the dish that much more delicious flavor.
How do you make Haluski?
First, boil the egg noodles in a large pot of water according to the package directions and drain well. Meanwhile, melt the butter in a large skillet over medium heat. Add the bacon and onion to the skillet until the onions are soft and the bacon is almost completely browned. Reduce the heat to low and add the garlic. Cook and stir for about 30 seconds. Then add the cabbage and continue cooking and stirring until the cabbage is tender. Add the cooked egg noodles to the cabbage mixture and toss to coat. Season with kosher salt and plenty of fresh ground black pepper.
Recipe notes and tips
- Don’t overcook the noodles because you don’t want them to break apart. Cook them slightly al dente.
- Get your bacon crispy, as crispy bacon tastes better and holds up better in this dish.
- Chop your cabbage into bite-size pieces.
- This dish is best as soon as it is cooked. I have had it sit for a bit, and it still tastes good. But right out of the pan upon completion is phenomenal.
- If you are looking for a heartier meal, then add thinly sliced pieces of kielbasa, chicken, or beef sausage at the same time that you add the onions.
- Use sweet cream butter.
- Season with salt and plenty of fresh ground black pepper.
- Store leftovers in an airtight container in the fridge for up to 3 days.

I’ve made this for several years and it’s delicious. It’s too much for just the two of us so I freeze smaller containers and it freezes great. I put a couple strips of bacon on top so they’re crispy when I thaw out the dish. Great with pork chops or a pork loin.
Beth Pierce
Thanks, Bonnie. It is one of my favorite side dishes and so easy.

I grew up with a Polish grandmother who could make a meal out of anything. I finally found a recipe that brought me back to her kitchen! Followed the recipe to the letter and this is fantastic! Added brats as a side dish😂Thank you!

Thanks Sarah, I am so glad that the Haluski brought back such great memories.

This was delicious! I did cook the bacon first and drain off the grease, which yielded 1/4 cup. I used half of the bacon grease and half of the amount of butter. I reserved the crispy bacon and put it in at the very end. I used German egg noodles that I found at Aldi…I think that put it over the top.
Beth Pierce
I bet it did! I love haluski. It is just so yummy!

Use Only very meaty Bacon ! And very little Butter !
Otherwise, the result is super Fatty and greasy.
But the Recipe is great besides that !

Hi Beth, is there a substitute for the cabbage? I would like to try this but I don’t eat cabbage.
Beth Pierce
No, sorry. The cabbage is the main ingredient.
Sandra D
I don’t see why you couldn’t substitute it with broccoli or cauliflower, since they’re in the same family.
